Now We're Cooking with Gas! Not Exactly

So, yesterday was very productive for me. I was able to drop the kids off at school, put gas in the car, go to the pharmacy, Target, Shoprite, Trader Joe’s and a job interview and cook 3 meals all before 5pm. Whew! I need a nap! Here’s a recipe I tried out for the family.

Chicken ‘n’ cheese balls

Ingredients

1/4 cup – Cheddar Cheese

1/2 cup – Boiled Sweetcorn

2 large – Chicken Breasts, boiled & shredded

2 Chillies, finely chopped

1 Coriander

1 Salt, to taste

4 Potatoes, boiled peeled & mashed

1 Plain flour

1 Eggs

1 Breadcrumbs

Serves 18.

Directions

1 In a bowl, mix all of the ingredients except the flour, egg and breadcrumbs. Mix well.

2 Shape into small balls.

3 Dip the balls into the flour, then the eggs and finally into the breadcrumbs.

4 Deep fry these at 180°F.

5 Done ! Ready to serve!

I put my own spin on it. I used red potatoes and substituted the cheddar cheese for fat free American slices (you have to work with what you got). I used wheat flour. I’m in the process of going gluten free so I need to find a substitute. I put my own seasonings instead of the chilies.

I never fry anything.  I always use the “oven-fry” method using my Nuwave Oven. If you never used it you should get it. Best thing ever! I hardly ever use my real oven anymore.
